Green teas undergo minimal processing in order to preserve the natural fresh flavor and health giving substances. After hand picking, the green leaves are spread out and allowed only a short wither. The leaves are then pan fired (China) or steamed (Japan) to prevent oxidation. There results are a drink high in antioxidants.
